RICE PUDDING WITH CARAMELIZED BANANA AND MINT

Ingredients:
50 Grams Rice
2 Bananas
50 Grams Caster Sugar
4 to 5 Mint Leaves
Pinch Cinnamon Powder
Pinch of fine sea Salt
2 Cup Milk
1 Butter Cube.
¼ Cup Fresh Cream



In a saucepan, boil the rice, sugar, salt and milk stirring it constantly.  Bring it to a boil. Cover the pan with a lid. Simmer it for 25 to 30 minutes until the rice is tender. Stir constantly to avoid burning of rice at the bottom of the pan. If the rice appears to be a bit dry, you can add little more milk or water.

Make puree of one banana. Caramelize sugar in another pan. Add banana puree to it. Stir constantly. Add a cube of butter. 
Add rice mixture to this. Add fresh cream and Cinnamon and some chopped mint leaves. Put this mixture in a mould. Refrigerate it for 30 minutes. Demould in serving plate. Serve with caramelized banana and mint leaves.
