POTATO SOUFFLÉ WITH GRILLED SCAMPI AND CAVIAR

Ingredients:
2 Medium Potatoes
1 Egg yolk
2 Egg Whites
1Tbsp Chopped Scallion
2 Tbsp Milk or Fresh Cream
2 Tbsp Grated Parmesan Cheese
2 Scampi, Cleaned
2 Chopped Garlic Cloves
1 Lemon
1Tbsp Olive Oil
1 Tbsp Caviar
Fresh Parsley
Pinch of Pepper and Salt to Taste




Boil the potatoes and peel the skin. Mash the potatoes. Add fresh cream, egg yolk, scallion ,  pepper and salt to taste. Mix them well. Beat the egg white to a froth and mix it with potatoes slowly to blend so that the froth does not settle.  Put the mixture in t a mould. Sprinkle grated Parmesan cheese on top and bake it at a temperature of 150 to 180 degrees centigrades for 10 to 15 minutes, or till done. 
At the same time, marinate the scampi with chopped garlic, olive oil, lemon juice, parsley pinch of pepper and salt to taste. Marinate it for 10 to 15 minutes. Grill it in a pan. 
Demould the potato souffle in a serving plate. Arrange the grilled scampi on it. Place the caviar on top of the souffle. Garnish with lemon rinds and parsley.
