FALAFEL SALAD ROLL WITH HUMMUS

Falafel:  
100 Grams Chickpeas
4 to 5 Chopped Garlic Cloves
1 Medium Chopped Onion
1Tsp Cumin Seeds
1Tbsp Refined Flour
1Tbsp Chopped Cilantro Leaf
Salt and Pepper to Taste


Soak the chickpeas overnight in normal water. Boil the chickpeas. Strain and bring them to a room temperature. Add the garlic, onion, cumin seeds and chopped cilantro. Mix them well or you may also grind it in a food processor. Add flour to it. Using a spoon make it into the shape of falafel and deep fry it. Keep them aside. 

Hummus:
50 Grams Boiled Chickpeas
2 To 3 Garlic Cloves
1Tbsp Tahini Paste
1Tsp Fresh Lemon Juice
A Pinch of Cumin Powder
2 Tbsp Olive Oil
A Pinch of Paprika Powder
Cilantro Or Fresh  Parsley Leaf
Salt to Taste

In food processor, add chickpeas, garlic,Tahini paste, lemon juice and olive oil and grind them to a smooth paste.
Pour it into a bowl. Add salt to taste. It should be arrange in such a way that there is small trough in the center. Pour olive oil in the center. Sprinkle Cumin and paprika powder on the sides. 
Prepare a dough made from wheat flour, salt, olive oil and water and roll it into round flat shape. Roast this bread on a nonstick pan.

Cut the cucumber, tomatoes, fresh lettuce, red cabbage in Juliennes. Add a little bit of olive oil and salt and keep it aside. 

Place a teaspoon of hummus in the center of the bread and spread it over. Add salad and arrange the falafel on the bread. Roll it over carefully. to hold the roll, pierce the bread with a toothpick and an olive.
